I'm wondering about the devices and units of measurement that people in China and Japan used prior to adopting the current method.

For China from what i understand, the methods were multiple. From the sun and astronomy to seasonal, or even a simple candle and an hour glass of sand. But the more sophisticated mechanism  that keeps coming up is the water clock.
