When and from where did these Chinese Jews originally come from?

Some traditions state that Hebrews immigrated to China as early as 230 BCE with most others believing they stemmed from the destruction of Jerusalem by Titus, or even as late as the 6th and 7th centuries,(Khazar jews?). It is said the Kaifeng Jews also fought in the armies of Yue Fei and included the characters fo Yue Fei's tattoos in their stele.

Were they a lost tribe, or Roman refugees?

They were basically Jewish tradesmen and businessmen. Jews played a very prominent role in the Silk Road trade route, especially before the Arab conquests. After that their role diminished, but nevertheless they were still actively involved in the trade with China. And many Jews who settled in China in the course of their commercial transactions formed the basis of Kaifeng Jews. Most likely their core was coming from Iran and they were of the same stock as the Central Asian Bukharian Jews. There is no evidence to link them directly to "the lost tribes or Roman refugees."

Interesting. Do the descendants of this community still exist today? Or have they largely been absorbed into the Han Chinese ethnicity?

Well, officially they have been assimilated by Chinese by the start of the 20th century. Unofficially, 10th of thousands Chinese from that area and other parts of China claim their Kaifeng Jewish ancestry and even are trying to immigrate to Israel based on that.
 
There are also interesting legends like that some prominent leaders of the modern Chinese history had some Jewish ancestry; like, for example, Zhou Enlai...
